Chef
Colin Shea is originally from southern New Hampshire where he learned
from his mother and his two grandmothers that any food can be great
food. His cooking career started at the very young age of fourteen
when he worked for a popular fast food restaurant. He quickly progressed
into other restaurants where he began to hone his skills. And then
after a couple of career changes in his twenties, he never abandoned
his cooking background and decided that going to school to become
a chef was not only a goal but his dream.
He
moved his wife Lisa from their home in the Merrimack Valley in north
eastern Massachusetts to Narragansett, Rhode Island in 1993 and
began his schooling at Johnson & Wales University College of
Culinary Arts. Chef Shea had opportunities to work on special projects
like working on food that would be used in movie scenes while at
the college as well as becoming a teaching assistant and then fellow
in his senior year. He graduated Magna Cum Laude from the university
in 1998 and immediately took the position of Culinary Purchaser
for the College of Culinary Arts. This is where he gained experience
in food cost, food quality and wine and beer appreciation.
After
his Son Ian was born, Chef Shea resigned from his job at the college
and started up his personal Chef service and his work at the Galilee
Mission located in Narragansett. "Working for the mission is
a way of giving back for all my prosperity as a husband, father
and chef throughout my life," says Chef Colin. It is at the
mission where he received some accolades in local papers for working
with the Cub Scouts and Girl Scouts on a soup kitchen project and
making pies for the resident's Thanksgiving dinner. Chef Colin says,
"I love to teach and who better to teach the value of food
and giving then to the scouts?"
Although the Chef graduated several years ago, he still continues
to read and keep up with the latest food trends and products. He
is constantly in the kitchen developing new and better ways to prepare
foodstuff using only the freshest and best ingredients. His food
is not only colorful, imaginative and tasty, but nutritious as well.
